Raw Blueberry Pie

Yield: 1 pie

Ingredients:
§ 1 cup raw walnuts
§ ½ cup dates, pitted
§ 1 tsp. vanilla extract
§ ½ tsp. ground cinnamon
§ Pinch sea salt
§ 4 cups organic fresh blueberries
§ 1 TB. honey

Instructions: In a food processor, combine walnuts, dates, vanilla extract, cinnamon, and sea salt until smooth. Press mixture evenly into a pie dish, and refrigerate for about 1 hour or until crust is hard.

Meanwhile, in the food processor, combine blueberries and honey. Pour into chilled crust, and refrigerate for at least 2 hours before serving.
