Mama’s Blueberry Muffins

I tested out muffin recipe after muffin recipe looking for something that was servable at the farm. They were all too dense, too sweet, or too something. Then this creation happened! The perfect fluffy, cakey, not too sweet treat. I hope you all enjoy the muffins as much as we do!

Preheat the oven to 400 degrees while you prepare the mixture. Turn it down to 375 to bake. The recipe makes 8 jumbo muffins.

1/2 cup butter (softened)
1 1/4 cup sugar
2 eggs
1 tsp vanilla
1 tsp fresh lemon juice
1/2 cup milk
2 cups flour
1 1/2 tsp salt
2 tsp baking powder
2 cups blueberries

  1. Cream butter and sugar together until smooth. Add eggs, vanilla, lemon juice and milk.
  2. Add dry ingredients. Mix lightly by hand. (Do not overmix or they won’t be as fluffy.)
  3. Bake at 375 degrees for 35 minutes. This baking time is for extra-large sized muffins. May vary for regular sizes.
